덴마크 노마(Noma, Copenhagen, Denmark)
Address: Refshalevej 96, 1432 København K, Denmark
2003년에 생긴 노마(Noma)는 René Redzepi가 소유하고 대표 주방장(Head chef)으로 있는 레스토랑입니다. 창의적인 뉴 노르딕 퀴진(New Nordic Cuisine)을 선보이며 북유럽을 대표하는 레스토랑으로 자리잡았습니다. 2021년에는 World's 50 Best Restaurants Awards에서 1위에 오르기도 했죠. 2016년에도 영업을 중단했다가 2018년에 재개장한 적이 있었는데요, 2024년 말에도 영업을 중단한 후 노마 3.0(Noma 3.0)으로 돌아올 거라고  합니다.

스페인 엘불리(El Bulli, Roses, Spain)
Address: Cala Montjoi, 17480 Roses, Girona
스페인 로세스 인근에 있었던 레스토랑으로 Ferran Adrià가 대표 주방장(head chef)으로 있었습니다. 세계 최고의 레스토랑이라고 해도 손색없을 이곳은 2011년 7월 30일 문을 닫았습니다. 이후 El Bulli Foundation은 2023년에 엘불리를 이해할 수 있는 박물관(food-laboratory-turned-museum) 형태로 엘블리(El Bulli 1846)를 재개장하였습니다.

미국 더프렌치런드리(The French Laundry, Yountville, California, USA)
Address: 6640 Washington St, Yountville, CA 94599, United States
토마스 켈러(Thomas Keller)가 소유하고 대표 주방장으로 있는 캘리포니아 식 프랑스 음식 전문 레스토랑으로 1978년 부터 영업을 하였습니다.

오스테리아 프란체스카나(Osteria Francescana, Modena, Italy)
Address: Via Stella, 22, 41121 Modena MO
Massimo Bottura가 소유하고 대표 주방장으로 있는 이탈리안 레스토랑입니다. 분자요리(molecular gastronomy)인 Modernist cuisine이기도 합니다.

일레븐 매디슨 파크(Eleven Madison Park, New York City, USA)

Daniel Humm이 소유하고 대표 주방장으로 있는 현대 미국음식(Contemporary American) 전문 레스토랑입니다. 창의적인 메뉴의 고급 식당으로 2021년 5월 동물성 재료를 사용하지 않겠다고 선언한 비건 식당이기도 합니다.
